So, there I was sitting in my car outside a petrol station in Castlebar three hours into my boot-camp. Munching away on a Corrib Oil salad bowl and absolutely livid with myself. My anger, I should add, had little to do with the contents of my nutritious salad which in fairness contained all of my preferred vegetables. Namely, boiled eggs and freshly picked mayonnaise from the organic Hellmann’s farm down the road.
